If your not opposed to using cheese there is a simple yummy open faced sandwich I serve often. On diagonally sliced, lightly toasted baguette smear a thin (meaning a heck of alot in my case) layer of brie, sprinkle with flax seeds and top with heaps of baby arugula and a dab or puree blackberry or raspberry. Its not really a sammy most kids will enjoy as the flavors are strong but I make it often for me and hubbie.
