Thread: Potluck to go to. What to make?

    Cool Potluck to go to. What to make?

    For labor day this year I have to make a dish to pass, I believe my husband said we'd bring a dessert. If anybody has any ideas on what to make let me know. I've done the whole cookie thing, pie thing, cake thing. I want something that is awesome and will blow there socks off. I just have NO idea what I want to make. And please something that is not overly difficult.

    How about some kind of a salad such as pasta or 4 bean salad?

    Well, what about brownies? If you are intrested, i have a really yummy and great recipe! It is sure to blow their socks off!

    Key Lime Squares

    Works every time for Pot Luck Desserts

    Key Lime Squares


    1 cup (250 mL) butter, at room temperature
    1/2 cup (125 mL) icing sugar
    2 cups (500 mL) all-purpose flour
    1/2 tsp (2 mL) salt


    Topping:
    4 eggs, beaten
    2 cups (500 mL) granulated sugar
    1/3 cup (75 mL) all-purpose flour
    2 tbsp (25 mL) granulated lemon zest - Optional
    1 tbsp (15 mL) grated lime zest - -Optional
    3 tbsp (45 mL) lemon juice
    3 tbsp (45 mL) lime juice
    Icing sugar for dusting
    1. Preheat oven to 350°F (180°C).

    2. In a food processor or by hand, mix together butter, icing sugar, flour and salt until well blended. The mixture will look like fine breadcrumbs. Pat into a 9 x 13-inch (3-L) greased pan. Prick with fork. Bake for 20 minutes, or until the pastry is a creamy gold.

    3. With an electric mixer or by hand, beat together eggs, granulated sugar, flour, zests and juices. Pour the mixture over the cooked base.

    4. Bake for 15 to 20 minutes or until set. Cut into squares then liberally dust with icing sugar.


    Makes about 30 squares

    Another idea that looks really pretty and isn't that difficult is a trifle. What you need:

    9x13 baked chocolate(or other) cake, cut or torn into bite size pieces
    fresh fruit or pie filling
    vanilla pudding(instant works or make it from scratch)
    whipped topping

    layer all in a glass dish: cake, pudding, fruit, whipped topping. Repeat layers two or three times - as you have room in the dish. I've had fun with this combination, because you can combine any kind of cake, fruit, and pudding that suits your fancy. Tastes very good too! My husband requested this as a favorite.

    If your tired of the same old desserts maybe try some chocolate covered fruit. Fresh strawberries, cherries, bananas and melons work well. The bitter sweet variety of choc is best for just this.
    Instead of throwing in all on a platter, you can create a very easy and pretty display by using a decorated syraform base and some ribbon, a loaf of bread or a half of melon turned over and use tooth picks or skewers to arrange. People always like to dip so you could always do it fondue style in either a fondue pot or double boiler.

    How about the pretzel bottom and jello middle with the cool whip on top? That is always a hit.

    I've made trifle before...WAY back in High school for a cooking class lol!! I remember we used pound cake, cool whip (I think), and raspberries. That was tasty.
