    Dates rolled in coconut/khas khas

    A VEGETARIAN DESSERT.
    I am having trouble finding a recipe for processing pitted dates, mixed with nuts, and
    rolled in coconut or Khas Khas (Indian food).

    I tried searching Cooks.com and am probably not using correct terminology.
    QUESTION - do i process the nuts *with* the dates? does it need flour or any other ingredient?
    i think i know it doesn't need cooking, right? What ratio of nuts to dates tastes
    best?

    OK - I am going to experiment and let you know how it goes. I will use 2 cups dates, processed to nearly paste, separately process pecans, walnuts, almonds.
    then blend together with the dates, place on clean cutting board (maybe plastic wrap? it's sticky?) and make a roll, about one inch diameter? then uhm, put
    coconut on one plate and roll dateroll in it, and some khas khas on another plate (i got from an Indian friend) and roll some. I will cut in 2 inch rolls,
    then HOW TO STORE? i will try a tupper ware type container. I will be back in half hour and let you know if this approximates what i ate at the wedding
    i attended. Oh, i will guess at nut amounts - then let you all know the measure i use. ANY TIPS please add to thread!! Off to the kitchen!

    it took a bit to process and then roll each tube in coconut...here is the recipe i invented. PLEASE offer suggestions, recipes, ideas - ...
    DATE ROLLS
    1 1/2 CUP WALNUTS, 1 cup pecans (whole unroasted), 1 cup roasted unsalted peacans (better taste), 4 cups pitted dates. 1/2 cup brown rice flour.
    1 cup sweetened coconut flakes, 1/4 c Khas Khas (white poppy seeds from India).
    in Blend tec blender, process brown rice to a flour, in blend tec process nuts about 1/2 cup at a time, til finely ground. (if you do nuts first, the oil
    in the nuts coats the blender, helping w the dates) Process the dates about 3/4 cup at a time. add a few tablespoons of rice flour to help manage
    the stickiness of the dates. THEN i used my Cuisinart with the pie crust attachment, to mix the nuts and dates together, (spray Cuisinart w Pam non
    stick coating), a bit at a time, until all the date/nut mixture was thoroughly blended. I then put disposable gloves on, and took a section of the mix,
    and put it on plastic wrap on the counter. I made one inch balls, and rolled it in the coconut (oh, i processed the coconut a bit in the blend tec, to
    make it slightly less flake sized), i also made balls and rolled them in the Khas Khas. MY GRANDKIDS GAVE IT TWO THUMBS UP.
