    pierogi casserole

    Hi everyone! I'd like to share this favorite recipe as a side dish. Goes great with just about everything, but I usually serve it with smoked or Polish sausage. You'll need: boiled lasagna pasta, mashed potatoes made with sour cream,cream cheese,green onion, and garlic powder.Shredded cheese,whatever your preference is and pats of butter. Spray your casserole dish with non-stick spray.Prepare mashed potatoes and boil lasagna noodles. Layer the pasta,top with potato mixture, then pats of butter/margarine,then the shredded cheese. Continue layering ending up with the cheese on top. Bake at 350 until cooked through, all cheese is melted. You may have to loosely with foil. Sorry that I do not have any measurements to share. I never measure anything unless I am baking. So, I just "eye-ball" it and figure it out by taste. Usually never salt and pepper until finished, that way guests can use their own judgment. Also, this way you can make a lot or for a bunch!!!Have fun,enjoy, and let me know what you think! Thanks.CarrieQ

    Hi CarrieQ and welcome to Talkfood.

    Thank you for sharing what looks like a wonderful and easy recipe - pierogi are a favorite of mine so I'll have to try this sometime soon!

    You mention using green onions in with the mashed potatoes which are very good in pierogi, but sometimes I use leeks sauteed in a little butter (or something similar).

    I have never tried a pierogi but a lot of my friends have suggested it!

    Sounds like a very yummy recipe CarrieQ. I am going to try this some time. About how long does it take you to prepare everything and then put it together?
