This sauce is a great accompaniment to sausages and hot dogs so much better than store-bought. I make enough of this each summer to last me all year, everyone loves it. This make 12 pints but you can make less if you don't want that much. I like to give it as gifts, especially to people who do not have a garden. Always appreciated!!

8 cups chopped seeded peeled tomatoes (about 10 large)
6 large onions, finely chopped
5 medium green peppers, finely chopped
2 large sweet red peppers, finely chopped
2 hot red peppers, seeded and chopped (use gloves when seeding)
4 cinnamon sticks
2 tablespoons whole cloves
6 medium ripe pears, peeled and chopped
6 medium ripe peaches, peeled and chopped
4 cups sugar
2 cups white vinegar
2 tablespoons salt

In a large kettle, bring tomatoes to a boil. Add onions and peppers. Place cinnamon and cloves on a double thickness of cheesecloth; bring up corners of cloth and tie with string to form a bag. Add to kettle. Cook until vegetables are tender. Stir in pears, peaches, sugar and vinegar and salt. Cook until fruit is very tender.
Discard spice bag. Ladle hot mixture into hot jars. Adjust caps. Process for 20 minutes in a boiling water-bath. Remove jars to wire racks to cool completely. Yield: 12 pints.
