Thread: Chocolate Pudding Cake

    Smile Chocolate Pudding Cake

    When I was a child we used to have this delicious dessert a lot. My Aunt Francis made it in a large white enamel baking dish and it feed a lot of people, which was a good thing because there was 7 kids in my family and 5 kids in my Aunt's family plus the adults, a large crowd indeed. I have scaled the recipe down some to fit my family.

    1 cup all-purpose flour
    3/4 cup white sugar
    2 tablespoons unsweetened cocoa powder
    2 teaspoons baking powder
    1/4 teaspoon salt
    1/2 cup milk
    2 tablespoons vegetable oil
    1 teaspoon vanilla extract
    3/4 cup packed brown sugar
    1/4 cup unsweetened cocoa powder
    1-1/2 cups boiling water

    Preheat oven to 350 F.
    In a mixing bowl stir together flour, white sugar, cocoa, baking powder and salt. Mix in milk, oil and vanilla until smooth.
    Pour into a ungreased 9-in. square baking dish. Spread batter evenly in pan, batter will be thick. Sprinkle with brown sugar and 1/4 cup cocoa. Pour boiling water over batter.
    Bake at 350 F. for 40 minutes. Let stand 15 minutes, then spoon into dessert dishes or cut into squares. Invert each square onto dessert plate and spoon sauce over each serving. Top with ice cream or whipped topping if desired.

    We always had this as kids too and was also one of my kids favorite desert. Everytime my 39 year old son comes home for a visit this is on the top of his list for me to make! Sooo good and so rich!

    Hot water pudding cake is a fun cake to make and I make it often because it's so easy. Thanks for sharing your version, lovetobake (I collect pudding cake recipes :)

    People who haven't made it before will be tempted to stir in the hot water - it's important not to stir because the unstirred hot water over the top is what forms the pudding.

    Thank you CM, I should have put that important step in the instructions. DO NOT STIR! Thank you for sharing all these pudding recipes, I especially like the sound of the Blueberry and Lemon Pudding Cakes, two of my all time favorites.
