Sounds like a quick and tasty meal. I've use creamed chicken in a similar way, poured into split popovers and combined with mixed veggies or even served over wide egg noodles.

Chicken a la king is always comfort food! I did 20 servings of chicken ( freezer) for soup,a la king, pot pie, stew. very versatile. Had company show up on friday...dinner half ready.
What's a "pour over" crust? Is that something like a biscuit dough?
I've never heard of it either. It appears to be a batter dough like a pancake that is thin enough to pour. Search cooks.com has some good examples.
