There are all sorts of different pasta recipes depending upon what you're wanting to make. Some noodle doughs use eggs, sour cream and/or butter (similar to what Pennyslyvania Dutch use, and also the type of dough used in pierogies) then there's Italian pasta made with flour, water, eggs (optional but usually included), salt and sometimes a little olive oil (but not always!). Italian pasta can either made totally by hand (Italians often mix it directly on a wooden board called a tavolini board). Or you can also use a food processor or stand mixer for part of the mixing, then finish up by kneading by hand. A different formula for pasta is used in an extrusion machine (it uses less water).
You can just roll noodles by hand using a rolling pin, but if you decide you like making pasta, get an Imperia or Marcato Atlas pasta machine (avoid the ones made in China). One of these machines is a good investment if you make pasta because they're very sturdy and it will last a lifetime unless you're in a humid environment (if you are, you should rub it down with mineral oil occasionally and store it in a large plastic bag).
Remember, the most important part is to get the consistency right and every recipe usually needs adjustment because flour absorbs different amounts of moisture according to the environment and other factors.
See PASTA DOUGH FOR ROLLER MACHINES for lots of good information to help you make pasta!
Here's a recipe for noodles. And here's some more information on noodles. And another recipe for noodles.
Have fun and let us know how it goes!
