Hello, I am new also and hoping to get tips, ideas & receipes. I have become a full time care taker for my mother and trying to find some ideas to tickle her taste buds, sneak in proteins(she is not a meat eater), carbs for her blood sugar & snacks. I am not a great cook, lack creativity, but I like to cook! Still learning this site so I hope I can find my way back.

To sneak proteins into your mom's diet, try chopped nuts (pistachios, macadamia nuts, almonds, almond flour, hazelnuts, walnuts, pecans, etc) and seeds (pumpkin seeds, sunflower seeds, sesame seeds, lentils, black beans and other dried beans, non-fat dry milk powder, whey powder) and fish/shellfish. Most of these are easy to disguise in baked goods, sauces, etc.
Thanks for the ideas! Seeds are something we can't use, she has a bit of a problem where seeds make her lower intestines flare up. Had not given black beans a thought or sprinkling some nuts thru her food. She LOVES pasta and I will use these ideas to incorperate into that. Thanks Again CM!!
Had another question, needing an alternative to Orange Juice which we use when her blood sugar is low because it raises it faster. Have burned her out on juices! Anyone have some ideas? Need high carbs that will work fast.
You might want to consider investing in a juicer or a high speed blender like a Vita-Mix, too. With a juicer, you can sneak all sorts of vegetable and fruit juices in disguise into soups, breads, cakes, pancakes and waffles without anyone suspecting.
I did this for years using carrots in soups and baked goods to feed vegetable-phobics who thought they hated "cooked carrots" but loved to eat everything that carrot juice found its way into.
If she loves to eat pasta, you might want to make some home-made pasta or noodles. You can add extra eggs and/or vegetable juice to the pasta and use high protein flour or semolina. If you make your own ravioli, you can fill it with all sorts of good things (good for leftovers, too).

I have never hand made pasta, can you really get enough veg juice in the pasta to make a significate, whats the word I am looking for?, arghhhh,,, Been thinking about a juicer or one of them elec hand held masher thingy. Karen, I hear so much, probally too much about Tofu, I have no clue but would like to start with a easy brezzy receipe just to get introduced. Thanks for the link.
OMG, I had found a bread receipe on Cooks last week and it went over very well. I was thinking of tweakin it a little and was copying it off to paper and I seen that it was sybmited by CM! Can ya guess CM?
