    Microwave Meatloaf

    You're very welcome. I love making meatloaf in the microwave now. I've made it for several neighbors as well and now they too are fans of using the microwave instead of the oven. I'm really glad you liked it.

    LOL, my husband says "and besides, her microwave meatloaf is to die for".

    I don't know if I'd go quite that far, but it really is better than baked.

    Yes I did, Mariah. For almost my entire life and I sure do miss it.

    Virginia is sure different than Texas. It took some getting used to. I really don't know that I have. It's a constant learning experience and required all sorts of adjustments. Up until last week, we were able to say that at least it wasn't at hot up here as it was in Texas. Whew! A week of over 100 degree days which included two consecutive days of 105 degrees shot that one down. But up here, we can look forward to the seasons. We actually can experience spring and fall. When we lived in Texas we went from "mild winter" right into summer!

    We were avid BBQ lovers in Texas, especially beef brisket. Upon moving up here, we've found that pork is more popular than beef. BBQ pork is okay, but it's not brisket by a long shot. So, to get our much needed brisket fix, smart me decided that I'd just buy some brisket and BBQ it the way we like it. Ha! Boy, was I in for a shocker. I expected brisket to be pretty much the same price as it was in Texas. Well, guess again, smart one... they must not have very many cattle up this way, because it was so expensive! Even on sale, it was almost $5 a pound. Omigosh, I was used to buying brisket at .79 - .99 cents a pound on sale but NEVER more than $2 a pound. I about fell over when I saw the price! This is almost embarrassing to admit but I was so desparate for good brisket that I even contacted a popular grocery company in Texas to see about having some shipped to me. Downside to that: I don't have storage for a whole cow! So, I had to come to the sad decision to stop talking about how much we wished we could have brisket. Now, I only buy it when I find some that I can afford. Not very often.

    We've tried BBQ restaurants, but a lot of them don't carry beef brisket. One highly recommended place sold us some BBQ brisket that was basically tasteless to us. So we only did that once.

    Wow, sorry about the length of this post. Didn't mean to ramble, but the memory of good BBQ brisket is dear to my heart and obviously lurking around in my mind.

    If you google mail order BBQ brisket there are several companies that will ship it to you.

    Would be nice to get brisket around here at .79-.99 cents a pound. I'm envious! Seems like nothing in the meat dept. is very affordable anymore. And I've noticed that sugar prices are going up in some stores, too (watch out for those smaller bags of sugar). Hope that's an aberration because it usually means that everything else will be going up soon.
