This is a lovely pesto recipe, that goes great as a dip with crackers etc or you can stir it into cooked pasta and make a lovely (authentically sicilian) simple and flavourful pasta dish.
Sicilian Potato Salad
Serves 4, as accompaniment
3 lbs. roasted or boiled potatoes (cooked in their skins)
2 tbsp. olive oil
2 tsp. oregano
1 tbsp. balsamic vinegar
Pinch of salt
The cooked potatoes are peeled and chopped roughly, then combined with all ingredients and served either warm or at room temperature.
