    how do I keep crunchy jalapenos

    I need plain, simple way of keeping jalapeno peppers and banana peppers crunchy. I have canned them both. Sparate and together. It does not matter what or how I do anything. They are still SOFT. Do I use alum, lime, olive oil, or what? I need someone who knows for a fact. his is important to pass down through history please.

    It's difficult to know what might be going wrong without seeing the recipe you're using or what steps you're taking when canning them. For example, how long are you processing them for, are you using vinegar, are you brining them first (to cure), etc?

    If you can post your recipe or what you're doing, maybe we can help.

    Are you pickleing them? If so, the alum in a soak with vinegar will keep some crunch don't know if it'll be enough. Hope that helps
