    Smile Rhubarb

    Hello, does anyone have any recipes with rhubarb in them? I have a ton of Rhubarb that needs to be eaten. Thanks!

    • RHUBARB LEMONADE SYRUP Servings: 20
    • 8 cups chopped rhubarb
    • 3 cups granulated sugar (I plan on using Splenda)
    • 3 tbsp. grated lemon rind
    • 1 1/2 cups lemon juice
    DIRECTIONS

    In a large saucepan, stir together 3 cups of water, rhubarb, sugar and lemon rind, bring to a boil.

    Reduce heat to medium-low, simmer, stirring until sugar is dissolved and rhubarb breaks up, about 10 minutes.

    Remove from heat and stir in lemon juice.

    Strain through a fine sieve, pressing out liquid. Let cool.

    To serve, add 3 parts water to 1 part syrup, serve over ice.

    Makes about 20 servings.

    Syrup is fine in the refrigerator for about 3 weeks. But I freeze mine. It makes a great granita.(like a snow cone) place in metal pan and freeze. stir every hour for 3 hours. Very tart and sweet.

    Hi Kateri-Marie, I posted a recipe for a Lunar Rhubarb Cake that is delicious. Try that one! And also one for Rhubarb Oat Bars is also a favorite, I also have a lot of rhubarb and I freeze a lot also to use all year, until the next season. I love rhubarb and strawberry pie. Yum!!!!!

    Sometimes I combine rhubarb with strawberries and make a syrup (sugar and water) to simmer them in until tender. A squeeze of fresh lemon juice brightens up the flavor, too. While still hot, pour into a jar and refrigerate, or use right away and pour into a pie shell and top with a lattice crust top!

    CM This would be so good on ice cream!!! I just got a flat of strawberries and I am going to make this, I always have rhubarb on hand. Thanks!!

    Try a Rhubarb/Strawberries crisp.

    Just mix 2 cups flour
    2 cups sugar
    2 cups oats
    1 cup butter
    dash salt
    put fruit at the bottom of 9/13 pan,at crumble on top,bake 350 30-45 mins, Enjoy!

    Thank you all so much-they all sound delicious! I am on a trip right now (been using all the camping recipes-thanks! ) but I'll have to try them when I get back!
