    Pancakes vs. waffles?

Which do you prefer pancakes or waffles? Do you prefer it with syrup or jam? I work with Miracle Whip and we have awesome discussions going on our Facebook page called Take a Stand. What are you passionate about?

I'm not a big fan of either one, but if I were to choose, it would be pancakes. My paternal grandmother (RIP) used to make me some delicious pancakes when I was kid. Now that I am older, much older, I prefer crepes, which taste great if you make them right and with the right fruit filling. But I would take pancakes over waffles, but waffle cones for ice cream are better than sugar cones.........

I love blueberry pancakes, with real maple syrup.

Blueberry pancakes are a favorite of mine, too, lovetobake45!

The deciding factor of which you prefer or even if you like pancakes or waffles at all is probably all in how you make them. The best flavor, I think, in pancakes and/or waffles comes from a recipe that uses buttermilk, and calls for the eggs whites to be beaten separately. When I'm in a hurry, I don't use a recipe - I just start with one or two eggs, some buttermilk and butter, fold in as little flour as possible to the right consistency, a bit of vanilla, a pinch of salt and sometimes, depending on the eggs, a pinch of baking soda or powder (if I used plain milk).

The batter should have the consistency of heavy cream if you're making waffles, but somewhat thicker for pancakes. If you like thicker pancakes, add a bit more flour, if you like thinner pancakes, add a little water, buttermilk, yogurt, sour cream or regular milk. A little grated lemon rind or a drop of lemon oil or almond oil provides a different flavor variation.

The secrets out.. Kateri-Marie has a sweet tooth. I like both but I put cinnamon into just about any type, banana, blueberry, or apple. I make a batch and freeze them for my husband. He could eat them everyday. As CM says separate the yolk and white. Whipping the white of the egg really makes a difference , lightens the taste and texture.
