It depends upon what the ingredients are in the recipe. In general, unless you have a lot of experience in canning, it's best to stick with recipes specially developed for canning.
The ingredients in a canning recipe are combined and the acidity is tested, the mass (how thick the dip is determines how long it takes for the correct processing temperature to reach the center of the jar of the size jar you're using). A proper headscape is calculated depending upon whether you'd need to use a water bath canner (high acid) or pressure cooker (low acid). Then the entire product is judged after processing to assess whether the quality is still good after the full processing time is completed.
If your cucumber dip is much like a standard pickle or oil cure pickle, you can use similar recipes to keep things simple. Most of the time, products containing dairy are not recommended for home canning, so if your dip recipe includes sour cream, it probably wouldn't be something that you'd can at home with good results.
