You can use scallop squash as you would any Summer squash (like zucchini) and they are especially good stuffed and baked. You can also use them in some eggplant dishes, such as Zucchini Parmesan. Just use the larger slices you'll have as you would use an eggplant for making Eggplant Parmesan.
You can puree the squash and bake it in breads, or cut it into cubes and steam it in a small amount of butter just until tender, or bread it and saute it. Summer squash is also good in pasta sauce.
