Anyone have a good recipe for veggie burritos. Where going to be making them while camping. Possibly want to mix everything at home first, and then warm it up on our portable table top stove that we are bringing.
Any suggestions would be appreciated. Thanks.
I would use the juilienne disc of a food processor and shred carrots, chop onions, red and green pepper strips, minced green onions and maybe mix it with a little cooked rice and salsa. I would also want to add some strips of beef, but that is up to you!
You can put your ingredients in a foil packet for each portion for easy reheating while camping.

Something my family enjoys doing is cutting up the vegetables ahead of time, then stir-frying them over an open fire.
Cut in thin sticks/wedges:
potatoes
carrots
sweet red peppers
green peppers
onions (sliced)
mix with fajita seasoning, soy sauce(to taste), and a little salt if desired. Can be cut up ahead of time, or just before you stir-fry them. Stir-fry in oil over fire. We used a homemade "wok" which worked very well, but I think any camping skillet would work. Serve with rice and tortillas. I agree with CM, I'd add chicken or beef strips, but it's wonderful without them too. Have fun camping!
