    Smile Traditional Gazpacho

    Traditional Gazpacho
    · Serves: 4

    Ingredients
    · 10 oz of bread
    · 21 oz. of tomato
    · 2 cloves of garlic
    · 2 onions
    · 2 red and green peppers
    · 1 cucumber (optional)
    · 7 tablespoons of oil
    · 2 tablespoons of vinegar
    · 1 1/2 tablespoon of water
    · Cumin (optional)

    Method
    Mash the cumin, the garlic and the soaked bread.
    In a plastic bowl mix the chopped onion, the chopped tomato, the oil, the vinegar, the salt and the mashed cumin, garlic and bread.
    Puree with the mixer and add very cold water to mix everything.
    Add salt and more vinegar to taste.
    Keep it in the fridge until served.
    Serve with additional chopped tomato, cucumber, peppers and the toasted bread cubes.

    Easy Shortcut Gazpacho

    Shirleigh Moog's recipe.

    2 cups canned tomatoes or skinned fresh tomatoes
    1 onion, chopped
    1 green pepper, chopped
    1 cucumber, skinned aand chopped
    ˝ cup red wine
    1 clove garlic, pressed or minced
    salt & pepper to taste
    2 Tbsp fresh lemon or lime juice
    2 cups V-8 (or tomato juice)
    ˝ cup olive oil
    Ľ tsp ground cumin
    1 Tbsp Hungarian paprika

    Combine first seven ingredients in a blender. blend for 30 seconds and pour into a large bowl. Add the last five ingredients to the pureed mix and refrogerate for 2 or more hours to chill.

    Try using grilled vegetables some day, it adds a new dimension to an old favorite!
