Wink Great Potato Recipe for Grill

We call this recipe "Mark Potatoes" because our friend Mark taught us how to make them right before he passed away.

Peel 8 large potatoes and cut into large dice
peel 1 large onion and cut into large dice

On a large sheet of aluminum foil (spray with cooking oil,we use pam) put the potatoes, onion and 1 whole stick butter. Close the foil up like a packet (so none of the butter leaks out) and place on grill. Grill or bake in oven( I put the packet on a cookie sheet) for 20 minutes. I put the foil packet on a platter to transport to table or counter. Be careful when opening up packet as not to get burnt from the steam.
The potatoes are tender,as is the onion and the butter has melted all over everything! Yummy!

I'm going to try that one, they look good! I can never resist adding a few herbs when I'm standing by them in the garden - may add a clove of garlic and a sprig of rosemary or thyme to the packet.

    Thanks for sharing!

This also works good with mushrooms or carrots. I do pockets of veggies for the BBQ all the time. Usually individual servings. No pots or pans. You will love the clean up. Don't forget the garlic!

I've tried something similar to that. I actually used a Garlic and Herb sauce I purchased a while back ago while grilling potatoes and steak, and it added the perfect touch to the whole meal itself. Looking at the jar right now, it's called "Garlic Sauce with Herbs" and it's by Festin. If you want to take a look at what they have (they have other sauces as well, like a Blackberry Chipotle sauce and Roasted Red Bell Pepper sauce), take a look at their website. It's www.festinfoods.com and it looks like you can purchase by the jar or by the case.
