James Beard, of course, had written so many cookbooks and here's a few I can list.

How to make homemade pasta, about pasta making equipment of the era, and many recipes for sauces and accompaniments.

If you make bread then this should be on your list. At the time this book was written there was a great interest in whole grains which also influenced many of the recipes. There is a good deal of information here about baking theory and what makes it all happen.
Recipes include many traditional breads, such as Black Breads, Russian Rye, Pumpernickel, and Portuguese Sweet Bread.
