    Red face The Best Old Fashioned Potato Salad

    People rave about this simple salad every time I make it. It was a recipe from my grandmother and it's great "comfort food" at those family barbecues:

    5 - 6 Yukon Gold Potatoes, boiled , peeled and cut into chunks
    6 - 7 hard boiled eggs, chopped
    4 stalks green onion, chopped
    4 large sweet pickles, diced
    Salt & Pepper to taste

    Dressing:
    1 cup mayonnaise
    1-1/2 tsp. yellow mustard
    4 Tbsp. sweet pickle juice

    Boil potatoes until easily pierced with a fork (about 20 minutes). Remove from water, let cool, and peel off off skins. Cut potato up into bite-size chunks and place into large salad bowl. Add diced hard-boiled eggs, chopped green onion and sweet pickles.

    In separate mixing bowl, combine mayonnaise, mustard and sweet pickle juice. Stir into salad and chill. If you like a more creamy salad, use 1-1/2 cups mayo, 2 tsp mustard and 5 Tbsp sweet pickle juice.

    My grandmother used to save one of the eggs and run it through the egg slicer once to get little egg circles. She'd then place the egg circles on top of the salad and sprinkle a little paprica over the top for garnish.

    This looks like a good one to keep handy for BBQ time. People always seem to like the potato salad versions that have eggs in them. Thanks for sharing!

    This sounds like a great salad.I love eggs in a potato salad.I make one that is a big hit every summer and it is similar to yours but a few twists.I like the tang of dill pickles so this one is a favorite.

    Dill Pickle Potato Salad

    8 med.potatoes
    8 hard boiled eggs
    2 celery ribs,diced
    6 green onions,chopped
    2 med.dill pickles,finely chopped

    Boil potatoes,til tender.Peel and cut in bite sized pieces.Chop eggs,celery,green onions and dill pickles.Add to potatoes.Mix lightly.Add dressing and chill at least 4 hours but overnight is best.

    Dressing:

    1-1/2 cups mayo (I use low-fat)
    1/4 cup dill pickle juice
    4-1/2 teaspoons mustard (I use Dijon for zip)
    1 teaspoon celery seed
    1 teaspoon salt
    1/2 teaspoon pepper

    Mix together using a wire whisk.Pour over salad. I serve this over a bed of lettuce. Very good!

    PA Dutch Style German Potato Salad

    Here's another good one!

    2 teaspoons salt
    1/4 cup minced onion
    1/3 cup vinegar
    1/2 cup water
    2 tablespoons olive oil or (bacon drippings are used traditionally)
    2 teaspoons flour
    1 tablespoon sugar
    1/8 tsp (large pinch) freshly ground pepper
    1 1/4 cups minced onion
    1 tablespoon finely chopped green pepper
    1 tablespoon finely chopped pimento
    1 tablespoon chopped dill pickle
    1 tablespoon minced parsley
    1 teaspoon celery seed
    5 cups sliced cooked potatoes

    Saute 3/4 cup of onion in the olive oil in a skillet until tender. Combine the flour, sugar, salt and pepper. Slowly add the wine and water and mix well.
    Add to the cooked onion and simmer til slightly thickened. Add the remaining ingredients and toss lightly until well coated with the dressing.

    Can be served hot or cold.
