    Once a month cooking

    Hello. My daughters and I are starting to do the Once A Month cooking. We would appreciate any recipes that can be frozen. Also I am looking for a casserole recipe that I used a number of years ago called "Mock Turkey Dressing" and it calls for Ground beef/Condensed Chicken Noodle Soup/bread cubes. Any help would be greatly appreciated.

    Most recipes freeze ok, as long as you have proper containers. Lasagna, casseroles, meatballs, pretty much anything that has a sauce or some other source of moisture will do just fine. Again, what you use to store it in the freezer is key. If you are freezing a casserole or lasagna dish, I would recommend using either an aluminum pan (the throwaway kind) or one of the new containers that go from the freezer to the oven to the dishwasher. This way, you can thaw, cook, serve all from the same container. Transferring containers could ruin your food. Just make sure that no air can get to the food to prevent freezer burning. You may need to do multiple layers of wrap. My mother-in-law swears by doing a layer of plastic wrap, being careful to press down onto the top of the food to get rid of any air pockets, then putting a layer of newspaper on top of that, then covering it all in aluminum foil. I am a mother or 3 young children and a schoolteacher (I teach high school English), so I am constantly on the run and cooking is becoming more of a luxury than I would like it to be.

    Wow I do not have a recipe but what a good idea-the once a month cooking I may try that but change it to 2 a month
