Looking for a rich beef short rib recipe that is full of flavors and NOT sweet.
I make mine like I do beef stew-- Brown the ribs well, add beef broth, a carrot, an onion stuck w/cloves, ground pepper, and a bay leaf or two. Cook -stovetop or oven- until beef is done as you like it. Remove beef from broth. Keep warm. Strain out the onion, cloves and old sad carrot. Add a few cut up potatoes and carrots to the broth and simmer until just tender. Thicken the broth with your favorite thickener--I use the flour/water combo. When gravy is right, return beef to pot and to warm up. We like lots of gravy so do it stovetop method. If you do it in the oven, before the meat is done add the veggies to roast up. Make gravy from stock separately, put a little broth over the ribs and let em crisp up.
