    Tasty Turkey Roll

    What you need:

    1 lb. ground turkey
    1/2 c. soft bread crumbs
    1/4 c. tomato juice
    1 egg, beaten
    2 cloves garlic, minced
    1/4 tsp. dried oregano
    1/4 tsp. black pepper
    1/4 lb. shaved turkey ham
    1 c. Mozzarella cheese, grated
    vegetable cooking spray
    chili sauce, (optional)

    What to do:

    1. In medium bowl combine turkey, bread crumbs, juice, egg, garlic, oregano and pepper.
    2. On rectangular (12-X 16-inch) piece of wax paper, shape turkey mixture into 9-X 12-inch rectangle on wax paper.
    3. Place turkey ham slices over top of turkey mixture and sprinkle cheese over turkey ham. Roll turkey, jellyroll- style, using wax paper to help roll. Lightly press ends of roll to seal. Place turkey roll seam side down on (13-X 9-X 1-inch) baking sheet, lightly coated with nonstick vegetable cooking spray.
    4. Bake in 350°F. oven 1 hour or until center of turkey roll reaches 160°F. on meat thermometer and is no longer pink.
    5. To serve, drizzle 2 Tbsp. chili sauce over top of roll, if desired, and cut into 12 equal pieces

    Turkey Spinach Loaf

    What you need:


    1 lb. ground turkey
    10 oz. spinach, thawed and well drained
    1/2 c. seasoned bread crumbs
    1/3 c. chopped sweet onion
    5 Tbsp. Dijon-style mustard, divided (4 to 1)
    1/2 c. grated Mozzerella cheese (substitute low fat to reduce total calories)
    1 jar (2 oz.) chopped pimiento, drained

    What to do:

    1. In medium bowl combine ground turkey, spinach, bread crumbs, onion and 4 Tbsp. mustard.
    2. In (9-inch diameter) pie plate, sprayed with vegetable oil, shape mixture into loaf approximately 6 x 4 inches. Bake at 350°F for 50 to 55 min. or until food thermometer, inserted in center of loaf, registers 160°F and juices run clear; remove from oven.
    3. Spread remaining 1 Tbsp. mustard over top of loaf and top with cheese. Sprinkle on pimentos. Return to oven and bake an additional 4 to 5 min. or until cheese is melted and the internal temperature registers 165°F. Allow to rest for about 5 min. before slicing.
