Chop up the onion and put it in a saucepan with the meat. Once the meat is fully cooked, add the salsa and let it simmer until the water evaporates (mostly, at least, you don't want it totally dried out, especially if you plan to eat it again for lunch the next day). Throw it in one of your cake pans, spread the cheese evenly under the top and throw it under the broiler for a few minutes. Helpful hint: if you use low-fat cheese there is a possibility that it will blow up like a balloon as it heats. I'm not telling how I know that.


Easy Chicken Bake
Chicken breasts, doesn't particularly matter what kind but I prefer boneless/skinless... just easier
A can of cream of mushroom soup with roasted garlic, or whatever "cream of " you dig
Wild rice (or you can even cheat and buy those 90 second microwave things)

Preheat your oven to 375. Put the chicken in your cake pan. Dump the can of soup and another can of water over it. Cook for about 35 minutes. Spoon over rice. P.S. Buy a meat thermometer. $4 will save you from eating overcooked (or, conversely, raw) meat for the next five years.


Fifteen Minute Fajitas
Whatever kind of steak is in budget, cut into strips. (A good knife makes this much easier)
Onions and Peppers (if you eat them), cut similarly.
A packet of fajita seasoning
Tortillas (you can store them in your freezer for quite a long time. 15 seconds in the microwave and they come back to life)
Cheese, sour cream, salsa, whatever you want for toppings.

Sear the meat in a pan, just for a few moments, add the seasonings and vegetables and some sort of liquid. I use a can of beer. Simmer. Put on a tortilla. Eat.


Unbelievably Good Meatballs That Sound Nasty
A bag of frozen meatballs
Equal amounts of ketchup and grape jelly
Garlic powder

If you get a crock pot, just throw it all together and cook for a couple hours. Otherwise, you'll have to cook the meatballs in the oven and mix the other ingredients in a saucepan and simmer while the meatballs cook. Then, dump them in the pot, stir, and enjoy.
