cooking for large group recipies and techniques

Hello out there. I was talked into cooking for our weekly meeting at church in which I will be serving 60 to 70 people each week. I am new to cooking for that many people and keeping the food warm but not overcooking, amounts, etc. I am figuring it out but if anyone has some good steadfast guidelines for this type of cooking I would love to know! I also need any recipies that you may have that you believe both children and adults would like. This is our children program on Wednesday nights so I want to cater to them but our adults come for a family style meal also so I would like to accomodate them also without much trouble. Any ideas??

    Wow! Karkthre, I am impressed with your bravery. What you are doing scares me. I don't have any experience cooking for large crowds, but I am going to throw out a thought which you may have already considered...any crockpot recipe seems as if it would work. Also, if you are familar with the computer program "Master Cook Book" there is a section in there for large crowds.

    Go to Growlies Angelfire.com. Search in several areas and find many ideas, ie amounts for 50, 100, 150 etc. Also, recipes, menus and conversions for different quantities. I use it often.

    I'm in the food service business and if your church has a kitchen that will be a plus, but if not then my next advice would be the large electric roaster instead of crockpots. Crockpots don't usually cook fast enough and keep foods hot enough to prevent food born illnesses. Keep in mind that you need to keep cold foods under 40 degrees and hot foods above 135 or 140 degrees at all times. If you cook ahead of the event you will need to cool any hot foods down quickly in shallow pans within a 2 hour span of time to under 40 degrees. I hope you haven't changed your mind!! Good luck!
